Sunday mornings may be a bit slower paced, but they can also set the tone for your upcoming week. No matter how they begin, they are the perfect time to enjoy an extra cup of tea, stay in bed a touch longer, and if you're really lucky you might get to work up a little Sunday morning kinda appetite. Wink. Wink.
No matter how your Sunday starts, it will be better with homemade pancakes. Not the store bought boxed pancakes. You know that kind, you add cold water, stir into a pasty blob, then half hearted call them homemade. No, not those, but the light, fluffy, real honest to goodness from scratch buttermilk pancakes. The hands down worth the calories kind of pancakes.
Surprisingly easy and with ingredients you probably already have on hand, there is no reason not to whip up a batch or two. They freeze great for mid week snacking.
So roll out of your comfy bed, throw on your apron or at least some clothes, and try a batch yourself. Your week will be off to THE best start and you will never go back to the box.
You Gotta Make These Pancakes-Pancake Recipe
1 ½ cups all-purpose flour
3 ½ teaspoons baking powder
1 teaspoon salt
1 tablespoon white or brown sugar
1 ¼ cups buttermilk (you can sub. whole milk)
1 egg-lightly beaten
3 tablespoons butter, melted (you can put the butter in your heated pan and then pour into the bowl)
In a large bowl, sift together the flour, baking powder, salt and sugar. Make a well in the center and pour in the milk, egg and melted butter; mix until smooth.
Heat a lightly oiled or buttered griddle or pan over medium-high heat. Pour or scoop the batter onto the griddle, using approximately 1/4 cup for each pancake. Brown on both sides - look for bubbles. Serve warm with syrup, jam, butter or whipped cream - remember calories don't count on Sundays...lol. You should seriously make extra and freeze them, you will be thrilled you did!
